How healthy is this cake made of dried figs from the island of Euboea!
Ingredients
200g Dried figs
1kg Whole-wheat flour
½ Teaspoon nutmeg powder
½ Teaspoon cardamom powder
½ Teaspoon clove powder
1 Teaspoon cinnamon powder
3 Teaspoon baking powder
1 Teaspoon baking soda
1 Teaspoon salt
150ml Honey
150ml Corn oil
100ml Cognac
200ml Fresh orange juice
Juice from the marinated dried figs
Method
Soak the dried figs for 24h in 200ml lukewarm water.
Chop off the stalks of the figs and cut them to pieces.
In a bowl mix the orange juice with the baking soda to fizz.
Add all the ingredients apart from the figs in the bowl and mix.
Butter and spread flour in a pan and pour the mix.
Flour the figs and put them on top of the mix.
Bake for 50’ at 160 °C.
